  2.   ORIENTAL CUCUMBER SALAD

  4. 1 1/2 Cucmbers, peeled, chopped
  5. 1 tsp. Salt
  6. 1 Jalapeno chili, seeded, minced
  7. 2 Tbl. rice vinegar
  8. 2 Tbl. oriental sesame oil
  9. 1 Tbl. soy sauce
  10. 2 tsp. sugar
  11.  
  12. Place cucmbers in medium bowl.  Sprinkle with salt. Toss.  Chill 1 hour.
  13. Drain cucmbers and return to bowl.  Combine remaining ingredients in another bowl.  Pour over cucmbers and toss to coat.
